Chilli & Cheese Toastie
4 slices of a Sourdough Bread
75g of a good strong Cheddar (Grated)
50g of grated Mozzarella
Pembrokeshire Chilli Farm Sweet Chilli Jam
1 finely chopped spring onion
Pinch of Cayenne Pepper
Sprinkle of Salt & Pepper
A little oil for frying
Start by carefully mixing the Cheese, Spring Onion, Salt & Pepper and
Cayenne Pepper in a bowl.
Take 2 slices of the bread, and on one side of each spoon as much of the
Sweet Chilli Jam on as you would like, use the back of the spoon to spread evenly.
On top of the Chilli Jam evenly place generous helpings of the cheese mixture then
place the other slices of bread on top to make a sandwich.
In a frying pan place a little oil and turn on the heat, when the pan is hot enough
carefully place the sandwiches in the pan, place something on top such as a
plate to push them down into the pan.
Cook for 3 -5 minutes until crisp and golden then flip over and repeat,
If there is any cheese mixture left this can be sprinkled on top to melt in.
Eat as soon as is comfortably possible....
