Spicy Chilli Con Carne

Ingredients:

  • 500g minced beef
  • 1 tbsp olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 tsp dried oregano
  • 1 tbsp tomato puree
  • 1 can (400g) chopped tomatoes
  • 1 can (400g) red kidney beans, drained and rinsed
  • 1 can (400g) black beans, drained and rinsed
  • 250 ml beef stock (made with 1 beef stock cube)
  • 2 tbsp Worcestershire sauce
  • 1-2 tsp Pembrokeshire Chilli Farm's Reapers Creepers XXX Hot Sauce (adjust according to your heat preference)

Instructions:

  1. Prepare Ingredients:
    • Chop the onion, red and green peppers, and mince the garlic.
    • Drain and rinse the red kidney beans and black beans.

  2. Cook the Mince:
    • Heat the olive oil in a large pot or deep frying pan over a medium heat.
    • Add the chopped onions and garlic. Sauté for about 3-4 minutes until they start to soften.
    • Add the minced beef and cook, stirring often, until it's browned all over. This should take about 5-6 minutes.

  3. Build the Sauce:
    • Stir in the tomato puree, chopped tomatoes, Worcestershire sauce, and beef stock.
    • Add the Pembrokeshire Chilli Farm's Reapers Creepers XXX Hot Sauce. Start with 1 teaspoon and adjust according to your taste preference.
    • Season with salt and black pepper.

  4. Simmer:
    • Bring the mixture to a boil, then reduce the heat to low.
    • Cover the pot and let it simmer gently for about 30 minutes, stirring occasionally.

  5. Add the Beans:
    • Add the drained kidney beans and black beans to the pot.
    • If using, stir in the finely grated dark chocolate for depth of flavour.
    • Continue to simmer uncovered for another 15 minutes, allowing the sauce to thicken.

  6. Check Seasoning:
    • Taste and adjust seasoning as necessary. Add more Reapers Creepers XXX hot sauce if desired.

  7. Serve:
    • Serve hot over steamed white rice or with crusty bread.
    • Garnish with fresh coriander, a dollop of sour cream or yoghurt, and grated cheddar cheese.
    • Optionally, add sliced jalapeños for extra heat.
