Spicy Chilli BBQ Beef Burger

 

For the Burgers:

  • 500g lean minced beef
  • 1 small red onion, finely chopped
  • 1 garlic clove, minced
  • 2 tbsp Pembrokeshire Chilli Farm Chilli BBQ Sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil (for frying)

For the Burger Toppings:

  • 4 slices of mature cheddar cheese
  • 1 red onion, thinly sliced into rings
  • 1 large tomato, sliced
  • 4 leaves of iceberg lettuce
  • 4 brioche burger buns, halved
  • 2 tbsp mayonnaise
  • 2 tbsp Pembrokeshire Chilli Farm Chilli BBQ Sauce (extra for topping)

For the Spicy Caramelised Onions:

  • 1 large white onion, thinly sliced
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 tbsp brown sugar
  • 1 tbsp Pembrokeshire Chilli Farm Chilli BBQ Sauce

Method:

  1. Prepare the Burger Patties:
    • In a large mixing bowl, combine the minced beef, finely chopped red onion, minced garlic, 2 tbsp of Pembrokeshire Chilli Farm Chilli BBQ Sauce, Worcestershire sauce, smoked paprika, salt, and pepper. Mix well using your hands until all the ingredients are thoroughly combined.
    • Divide the mixture into four equal portions and shape them into burger patties. Make a slight indent in the middle of each patty with your thumb to help them cook evenly.

  2. Make the Spicy Caramelised Onions:
    • Heat the butter and olive oil in a frying pan over medium heat. Add the sliced white onion and cook for 5-7 minutes until softened.
    • Sprinkle the brown sugar over the onions and continue to cook for another 5 minutes until caramelised.
    • Stir in 1 tbsp of Pembrokeshire Chilli Farm Chilli BBQ Sauce and cook for another 2 minutes. Remove from heat and set aside.

  3. Cook the Burger Patties:
    • Heat 1 tbsp of olive oil in a large frying pan over medium-high heat. Add the burger patties and cook for 4-5 minutes on each side, or until they are cooked to your desired level of doneness.
    • During the last minute of cooking, place a slice of mature cheddar cheese on top of each patty and cover the pan with a lid to melt the cheese.

  4. Toast the Burger Buns:
    • While the patties are cooking, toast the brioche burger buns in a separate pan or under a grill for 1-2 minutes until golden and slightly crispy.

  5. Assemble the Burgers:
    • Spread a thin layer of mayonnaise on the bottom half of each toasted bun.
    • Place a leaf of iceberg lettuce on each bun, followed by a slice of tomato.
    • Add the cooked beef patty with melted cheddar cheese on top.
    • Spoon a generous helping of spicy caramelised onions over the cheese.
    • Drizzle a little extra Pembrokeshire Chilli Farm Chilli BBQ Sauce over the onions for an added kick.
    • Finish with a few red onion rings and the top half of the brioche bun.

  6. Serve:
    • Serve the burgers immediately with your choice of sides, such as sweet potato fries, onion rings, or a fresh side salad.
