Reapers Creepers Chilli Con Carne

- 2 medium onions, finely chopped
- 2 cloves of garlic, minced
- 2 medium carrots, finely chopped
- 2 sticks celery, finely chopped
- 2 red peppers, halved, deseeded and roughly chopped
- Olive oil
- 1tsp chilli powder
- 1tsp ground cumin
- 1tsp ground cinnamon
- 1 x 400g tin of chickpeas, drained
- 1 x 400g tin of red kidney beans, drained
- 2 x 400g tin of chopped tomatoes
- 500g quality minced beef
- ½ a bunch of fresh coriander (15g), stalks finely chopped, leaves reserved for garnish
- 2tbsp balsamic vinegar
- 2tbsp Reapers Creepers hot sauce (adjust according to preference and heat tolerance)
- Salt and black pepper to taste

  1. Heat 2 tablespoons of olive oil in a large casserole pan over a medium-high heat. Add the chopped onions, garlic, carrots, celery and red peppers. Sprinkle with chilli powder, cumin, cinnamon, salt and black pepper. Cook for about 7 minutes, stirring regularly until the vegetables are softened.

  2. Add the drained chickpeas and kidney beans to the pan. Pour in the chopped tomatoes, breaking them up with the back of a spoon. Add 1 tin's worth of water.

  3. Stir in the minced beef, breaking up any larger chunks.

  4. Add 2 tablespoons of Reapers Creepers hot sauce for extra spiciness. Adjust according to your heat preference and tolerance.

  5. Stir in the finely chopped coriander stalks and balsamic vinegar. Season with additional salt and black pepper to taste.

  6. Bring the mixture to a boil, then reduce the heat to low. Simmer with the lid slightly ajar for about 1 hour, or until the chilli is slightly thickened and reduced, stirring occasionally.

  7. Serve the Reapers Creepers Chilli Con Carne with fluffy rice, couscous, or a jacket potato. Accompany with yoghurt, guacamole, and lime wedges on the side for squeezing over. Garnish with the reserved coriander leaves and fresh chilli if desired. Enjoy the spicy goodness!
